weigh in this week 6.5 pound!!!

I had been away for a weeks holiday and I was trying to be very good over there. I was pretty good for about 3 days... than I went bad...but I didn't touch any chocolate, I guess that helped! When I got back home I was very good, for the whole week. I had a lot of fruit and veg for in-between snacks and had very low point TV snacks. I was soooo happy when I found out I had lost 6.6 pound!
TV snacks: Pickles, Cucumber and Grapefruit

BBQ turkey skewers/kebabs 2sp for 3 of them

BBQ turkey skewers/kebabs 4sp the lot!

The picture shows how they look before they are put on the BBQ.
I used 4sp worth of turkey breast
mushrooms, courgettes, peppers, onions and
pepper/salt/sweet pepper powder for seasoning

Very Low Meat-Loaf or Meat-Balls

Beef Meat-Loaf 6 pp per BIG slice on picture (3 pp for medium slice)
This recipe makes 5 BIG portions or 10 medium. 30 pp for the whole recipe. I keep the slices in the freezer!!! You can also use the recipe to make meat balls.
500 g lean beef steak mince from LIDL - 14 pp
1 egg - 2pp
2 slc of white bread - 4 pp
1 onion
1 tomato (optional)
garlic and salt and pepper

In a big bowl put the minced meat, the egg, the finely cut onion, the finely cut up bread cubes, the salt, pepper, garlic and if you like a finely chopped tomato. Use your hands to mash everything into a dough

Spray low fat cooking spray on a bread tin or baking tray or cake tin. I use a silicon cake mould, they are perfect for it!!! pre heat the oven on full heat, pack the meat mash into the tray tightly and bake for 45 min. Everyone in the family will love it!!!

You could form meat balls instead and just bake them on a tray, its 30 pp for the whole recipe, so just do the maths for the meat balls. you could easily get 15 for 2 pp each!!!

2 different kind of salads

Carrot and Apple Salad 0 pp
Grate equal amounts of apple and carrots mix together with the juice of half a lemon. You will be surprised with the nice taste of this!!!

German Pasta Salad 4 pp per portion
This recipe has 4 portions and is great for bringing to a Party or 2 days of packed lunch. The recipe has 16 pp altogether but you can change that easily.
I used Lidl for the ingrediants.

1 Dulano german Bockwurst - 4 pp
1 tin of carrots
1 tin of peas - 4 pp
60g of fry pasta - 6 pp
little onion
hand full of sliced pickles
100g lighter than light mayo - 2 pp
salt
parsley if you like

Drain the tins of peas and carrots. You have to use the tinned veg instead the fresh veg for the right taste of this recipe. Also try it without the onion altogether. Boil the pasta (not too soft), let is cool and than add all other things. keep in fridge eat within 3 days.

Toasted Sandwich Pizza 5-7pp

A sandwich maker is an absolute must in my family. Did you know you can make them up in batches and freeze them. They defrost in your toaster. You can fill them with tuna, mayo and  sweetcorn, ham, cheese, veg and cheese, scrambled egg and ham or whatever you like.

Forget about the bread, you can also use the sandwich maker to fry small side amounts of veggies like mushrooms or peppers!!!

I love to make them as a low point pizza option. For 1 triangle with ham, cheese and mushroom 3pp

2 slc bread - 4pp
1 slc lidl Linessa cheese singles - 1pp
Tomato puree/ Passata - 0pp

than top with either of the fallowing

sliced mushrooms
sliced peppers
chopped onions
any finely chopped vegetable you like
sweetcorn
ham 4 slc lidl wafer thin - 1pp
salami 1 slc lidl wafer thin - 1pp

Tuna cream cheese sandwich filling

This is great for bringing on a picnic or for a filling lunch!
This is all you need for this very nice filling for sandwiches or a Bagel. Medium portion with 2 slices of toast or WW bagel is 7pp very large portion with big lidl bagel is 10pp

For a large portion use 100g/ 2pp of the cream cheese or 50g/ 1pp for a medium portion.
half a tin of Tuna in brine not oil, drained 2pp
I use only a little bit of onion or 1 spring onion and a little bit of finely cut celery, but thats optional
you can also add chopped sweet peppers or tomato.

add salt and pepper and with a fork mush it until it becomes a paste.
It is very nice on a bagel. Weight watchers Bagels are 4pp but they are small. Lidle sell a 2 pack of sealed bagels for 6pp each. They come with seeds on or plain. just half them and put into the toaster.
